 During this well-known campaign, which is held in Palafrugell at the end of the year, from 29th november until 14th december, the casserole called el niu (‘the nest’) can be tasted in various restaurants of the municipal district. It is a typical local winter dish, which the cork cutters of Palafrugell used to eat on Mondays. Since it takes several hours to prepare, it is not normally included on restaurant menus: you have to order it in advance or else take advantage of this annual campaign to try it.
Originally this was a dish for Lent and meat was not included: it was made from fresh and dried cod (stockfish), boiled eggs and potatoes. But with time it has gradually been enriched: the fishermen added cuttlefish and the cork cutters completed it with game birds and even sausages.
