 Garoines are sea urchins, and their spiny black shell hides five delicious strips of orange-coloured flesh. The period between January and March, when they are full and catching them does not affect their breeding patterns, is when the restaurants of the town of Palafrugell organise the campaign called the garoinada.
This is a gastronomic campaign that uses sea urchins, offered as a starter, as its main product. They are served fresh and open without any kind of sauce or dressing. The second course is different in each edition. This time, two products have been chosen which we often use in our cooking, squid and crayfish, where each restaurant combines them in a different way. The desserts are also different in each restaurant. In this edition, the only item in common is the orange. Therefore, there is a wide range of options depending on the restaurant chosen.
